I know how this can be. I've a tendency to want to cook complicated stuff that takes too much time, too many fancy ingredients. Or I just don't get it together to go shopping and plan ahead for the week.
If you can take just half a day out of your schedule a week to make food, make some hearty soups - they can be cheap, really healthy, and quick to make. Freeze them for later use. Get yourself a small thermos, heat the soup up while you're getting ready for the day in the morning, pop the soup in there and you've got food/ This is also a good way to get your greens so you stay healthy.

Ok, you have to eat more, Joanne. (although I know it's sometimes hard to find time to eat when you're so busy.) I had one of those cupcakes from Whole Foods last week - vanilla, but the cake part kind of tasted like carrot. With the frosting to compliment the cake, I found it to be absolutely delicious. I know I can make better myself, but who has the time? My sister was nice enough to bring me this treat last week.
